Fava beans on the right with mild spices was done with non nightshades veggies for a work potluck. Turned out pretty well as it was all gone so there were no left overs.
This was a variation of my style of cooking not to add any tomatoes or tomatillos or eggplant to adapt the dish to accommodate work place allergies, so everyone can enjoy the dishes.
I enjoyed cooking it and it was definitely worth staying up late until 1 am to complete cooking. Although I started cooking at 11:30 pm only. 😉
I felt blessed to get all the great feedback from co-workers knowing that they enjoyed eating it just as much as I enjoyed cooking it for them.
