Mango Soy Smoothie

As the summer is quickly approaching I am in the mood for
mango-based desserts. Today, let's make a mango soy smoothie.

Ingredients

1 large ripe freshly peeled and cut mango
2 cups of soy milk (I used Eden Soy milk, see attached picture)
¼ cup confectioner's sugar












Nice-to-have ingredients (Optional)
2-3 cardamoms
Confectioner's sugar can be replaced by brown sugar.

Blend mango slices and soy milk on high. Pour sugar in the blender.
Select beat on low speed.
Take a few cardamoms, peel them, and gently roll a rolling pin on them
or pulverize them with a pestle and mortar.

Suggestions: Pour into tall glasses and serve them chilled. Add a
fresh mint leaf and a slice of strawberry.

Makes 2-3 servings.

I usually enjoy these tall smoothies with my daughter and husband on sunny days.
