Shitake Mushrooms, Cabbage, and Roasted Chestnuts




I was in the mood for chopping Shitake mushrooms today. I like the chewy
texture and flavor of cooked Shitake mushrooms.

Shitake Mushrooms, Red Cabbage, and Roasted Chestnuts

1 pack shitake mushrooms {I bought them at Trader Joe's}
1 whole red cabbage
7 roasted chestnuts (rinsed, peeled, thawed at room temperature and chopped)
4 cloves garlic chopped fine
1/2 tsp cumin
salt to taste
1/2 tsp chilli powder
1/2 tsp ground turmeric
3 tbsp vegetable oil
1/4 cup water

Rinse and chop all veggies. In a medium 12-inch pan on medium heat add oil and cumin. Once they turn golden brown, add the garlic, chestnuts, mushrooms and cabbage. Add spices. Stir.
Add water. Stir again. Cover with a lid and cook for about 20 minutes stirring every four to five minutes.

Serve warm with lightly toasted Rosemary-Garlic bread or a bread of your choice.
