Lettuce, Mushroom, Zucchini Medley
In the refrigerator, I saw mushrooms and wanted to make a dish with it. I also wanted to eat lettuce today so I felt why not add that to the dish and get the best of both worlds. I have cooked zucchini and mushrooms earlier and liked the combination, so they got automatically selected for this recipe. That's how this recipe was born.
Ingredients
5 zucchini peeled and chopped
2 cup coarsely chopped lettuce
8 shitake mushrooms
4 tomatoes chopped
1/2 onion "
1 large carrot "
6 cloves garlic
1/2 inch ginger chopped
1/2 tsp ground turmeric
1/2 tsp chili powder
1/4 tsp garam masala
1/4 tsp coriander powder
pinch of asafoetida or hing
salt to taste
4 tbsp vegetable oil
2 tbsp water
Wash, peel and chop veggies. On medium heat warm oil and sautee the onions. Add garlic ginger, stir for a couple of minutes then add tomatoes. Add the veggies, spices and sprinkle water then cover and cook for 20 minutes until the veggies are cooked and tender.
Garnish with freshly chopped parsley leaves. Serve with your favorite bread.
