Brussels Sprouts with Red Onions
Ingredients
30 small to medium brussels sprouts
1/2 cup chopped red onion
4 tbsp vegetable oil
a pinch of asafoetida ( also called hing in Hindi)
1 1/2 tsp salt or to taste
1/2 tsp coriander powder
1 tsp turmeric powder
3/4 tsp chilli powder
3/4 tsp garam masala
1/2 cup water
Rinse Brussels sprouts thoroughly. Drain on a paper towel. Heat oil in a skillet/pan on medium high.Then add the onions. Toss them for about two to three minutes till they are translucent. Add the Brussels sprouts. Toss for one to two minutes, then add the salt and spices. Add half a cup water, stir, then cook on medium heat for about 20 minutes..
Cook until they become tender but not mushy.
Serve warm with your favorite soup. It is great for a light meal.
Serves four.
I served these with paratha ( recipe coming soon) and lentil soup. My husband loved it.
