Highlights: May 4, 2009

An article that talks about meatless dishes, I also make for Quinoa pilaf and Scrambled tofu.

I must say couscous and quinoa make a great light meal, and I usually make a soup to go with it.
When I had the cold for a week I was eating tangerines and oatmeal diluted with lots of water and cooked well to keep hydrated. It worked well for me.

Oatmeal soup

4 tbsp steel cut or instant oats
1 cup water
1 tbsp pumpkin seeds
juice of 1/4 lime
1 tbsp canola oil
salt to taste

Boil the water and oats in a 10-inch pan, on the stove top. Cook on medium flame for a few minutes. When oats swell in size add the oil, salt, seeds and lime juice.

Eat warm.

For dessert eat fresh tangerines.

Enjoy!

If I make this recipe, my family will think that I have lost my mind! Oatmeal Soup? Sounds good...must try it and confirm their suspicions. (How does one buy pumpkin seeds? Are they dried? Are they with the nuts? Spices? Do I have to buy a pumpkin? Inquiring minds want to know!)

I'm home sick with strep throat at the moment and want you to know that last night's Gobi was the first thing besides SOUP that I've been able to eat since Sunday. Soft cauliflower was the perfect food for someone who was hungry, but has a sore throat! Next time, I will decrease the olive oil and increase the number of tomatoes and peppers!

P.S. I have to travel nearly three hours to Fort Worth to find spices, but we finally have naan in Abilene.

It is good to hear from you again, it has been a while since we heard from you.
Sometimes, when we are under the weather only certain foods are easy to swallow and I found that this recipe worked for me. Let me know the reactions from your family.
You can buy pumpkin seeds at Trader Joe's. I have tried the pumpkin seeds from a pumpkin but it takes a few days and you need to rinse them out first then dry them under the sun and peel the skin off and they are ready to use in the recipe, if ready made seeds are not available in Abilene.

Get plenty of rest.
