Highlights

An article that talks about vegans and shows that it can be done if small steps are taken.
The staff at The Tennessean try it for a month and have learnt a lot in the process. Take it slowly, one meal at a time.
Meatless Mondays is not difficult and even meat eaters are willing to make that change for themselves and the environment.
Vegan food cooks faster as opposed to meat, so Valerie Quarles changed to more vegetarian options. Cassie Johnson cares about the environment and animal welfare and that's her story of becoming a vegan for three years in college and still chooses mostly vegan except occasionally when she is not. Make a difference whenever you can and do your best.

I think more and more people are shifting over to being a vegetarian during the later part of their life.
