Book Review- Vegan Express

Let's talk about Nava Atlas's book Vegan Express.

Vegan Express is a good size book with 160 recipes that are fast to cook and great for the calorie counter and waist conscious. Some of the ingredients can be found easily in your pantry and everyday cooking so you don't have to wonder what it tastes like, or run to the store to buy it for a particular recipe. The recipes include vegan version of savory soups, pastas, veggies, pizzas and quesadillas. You can find recipes for cakes, pies, mousse and pudding without any harm done to animals as they have no eggs or dairy. The nutritional data at the end of the recipe is very helpful when you want to eat light or eat a high fiber diet on a particular day. I would have loved to see more colorful pictures of Tofu Shakshouska, Tempeh Fries with Horseradish or Wasabi Dill Mayonnaise, Paella Vegetariana and ButterScotch Mousse Pie. The layout of the book is easy to follow and the index is detailed and helpful.

Nava Atlas has done it again creating easy to prepare dairy free meals. They are a perfect ensemble from soup to dessert that is mouthwatering and health conscious.
