Jaggery, Pineapple, Banana, vegan dessert

Happy Valentine's Day! 

                                        Melt jaggery (unrefined, uncentrifuged whole cane sugar) at low temperature.

                                          Add pineapple to the jaggery, and in a separate bowl make batter with one mashed banana and 2 cup all purpose flour, 2 cup sugar, 1 and one-half tsp baking powder and 1 and three quarter cup almond milk, 1 tsp vanilla.

                                         Pour batter on the layer of pineapple in the baking dish.

                                         Bake at 375 degrees for 50- 55 min. depending upon your oven,  or until tooth pick comes out clean.

Serve.
